Vegetarian Empanadas

Heres an easy empanada recipe that uses store-bought pie crust. The filling is vegetarian so its a perfect picnic food or road trip food. Yay!

Ingredients

Pie crust 1
Frozen spinach 10 Ounce , thawed and squeezed dry (1 box)
Potato 1 Small (cooked and diced , about cup)
Salt 1/2 Teaspoon
Cumin seeds 1/2 Teaspoon
Ground cinnamon 1/8 Teaspoon
Cheese 6 Ounce (As much cheese as you can cram in, probably ounce to 1 ounce per empanada)
Flour 4 Tablespoon (for rolling)

Directions

GETTING READY:

1.Preheat oven to 400F.

MAKING:

2.In a large bowl, combine spinach, potatoes and spices.

3.Unroll and prepare pie crust. Roll out and cut circles as shown in the video.

4.Place 2 tablespoons of filling and top with cheese slices on dough circles.

5.Fold over and seal with water as shown in the video.

6.Place on cookie sheet and pop into oven.

7.Bake for 25-30 minutes.

8.Serve and enjoy!
