Nachos Supreme With Avocado Cream

I can't believe I just now realized that Nachos Supreme rhymes with Avocado Cream! Dang. Anyway, you will love these ultimate nachos with two kinds of beans, beef, cheese, jalapeños and a home made avocado-serrano cream sauce.

Ingredients

For avocado sauce:
Avocado 1/2 , cubed
Sour cream/Mexican crema 1/3 Cup (5.33 tbs)
Lime juice 2 Tablespoon
Serrano pepper 1 , seeded and diced
Salt 1/2 Teaspoon
For nacho topping:
Oil 1 Teaspoon
Diced onion 1/2 Cup (8 tbs)
Garlic 1 Clove (5 gm) , minced
Lean ground beef 1/2 Pound
Water 1/4 Cup (4 tbs)
Chilli powder 1 Tablespoon
Ground cumin 1 Teaspoon
Black pepper 1/2 Teaspoon
Ketchup 2 Tablespoon
Salt 1/2 Teaspoon
Cooked black beans 1 1/4 Cup (20 tbs) , well
Refried beans 1 Cup (16 tbs)
Grated cheese 1 1/2 Cup (24 tbs) (Monterey Jack, Oaxaca, or a Mexican blend)
Pickled jalapeno slice 1/2 Cup (8 tbs)
Roma tomato 1 , seeded, diced
Green onion 4 , sliced thinly

Directions

GETTING READY:

1.Preheat oven to 350F.

MAKING:

2.In a blender, combine avocado, sour cream, lime juice, Serrano, salt and blend until smooth for sauce.

3.Heat oil in a skillet and saute onions and garlic in it.

4.When onions soften, add chilli powder, cumin, black pepper and cook for 30 seconds.

5.Add beef, water and stir well.

6.Add ketchup and cook until meat browns. Add salt, beans and set aside.

7.Place 1 teaspoon of beans on each nacho chips. Top with meat mixture and sprinkle cheese over it.

8.Place jalapeno slices over it and repeat layering.

9.Pop into oven and bake for 4-5 minutes until cheese melts.

10.Once done, drizzle sauce over with and top with tomatoes and green onions.

SERVING:

11.Serve and enjoy!
