Pico de gallo is a wonderful medley of tomatoes, chilli,lime juice, onions and cilantro. I've added Tomatillos as a special treat!
Roma tomatoes | 3 , seeded and diced | |
Tomatillo | 1 | |
Finely diced red onion | 1/4 Cup (4 tbs) | |
Jalapeno | 1/2 Small , seeded and diced | |
Salt & pepper | To Taste | |
Lime juice | 1 Tablespoon | |
Chopped cilantro | 1/2 Cup (8 tbs) |
MAKING
1. Take tomatoes, tomatillo, choped onion and jalapeno.
2. Season with salt and pepper.
3. Add lemon juice and cilantro. Give it a good mix.
SERVING
4. Transfer to a serving dish and serve.
