Mexican Scrambled Eggs
|Tomato||1 Large, peeled, seeded, chopped|
|Chopped green pepper||1 Tablespoon|
|Chopped parsley||1 Tablespoon|
|Chopped ham||1⁄2 Cup (8 tbs)|
|Chopped chives||2 Tablespoon|
Beat eggs in mixing bowl with milk.
Add tomato, green pepper, and parsley; stir well to combine.
Melt butter over low heat in large, heavy skillet; saute ham 3 minutes.
Pour in egg mixture; cook, stirring frequently with spatula, until set.
Sprinkle with chives.
