Betty's Version of Saul Good's Steak and Beer Cheese Nachos

Betty demonstrates how to make Steak and Beer Cheese Nachos. This is an appetizer similar to the one served at Saul Good Restaurant and Pub in Lexington, Kentucky, which was visited recently by Betty's Kitchen.

Ingredients

For hall's snappy beer cheese
Shredded sharp cheese 2 Cup (32 tbs)
Garlic powder 1/4 Teaspoon
Ground red pepper 1/4 Teaspoon
Tobasco sauce 1/4 Teaspoon (or any hot sauce)
Stale beer 1/4 Cup (4 tbs)
For steak
Top sirloin steak 1 , sliced into half (use as needed)
Coarse sea salt To Taste
Freshly ground peppercorns To Taste
Other ingredient
Blue corn tortilla chips 250 Gram (as needed)
Shredded mexican cheese blend 1/2 Cup (8 tbs) (Use 5 cheeses of your choice as needed)
Chopped cilantro 2 Tablespoon (as needed)
Sliced green onion 2 Tablespoon (as needed)
Sliced jalapeno pepper To Taste , seeds and fibers removed
Lime wedge 4 (as needed)

Directions

MAKING

For Hall's Snappy Beer Cheese:

1. In blender, place sharp cheese, garlic powder, ground red pepper and tobacco sauce. Pulse until combine.

2. Pour beer and blend well. Add more beer to make it thin, if desired. Transfer to a bowl and set aside.

For Sirloin Steak:

3. Season steak with sea salt and freshly ground pepper.

4. Heat an iron skillet and sear steak on both sides or until the meat reaches an internal temperature of 150-155 degree F.

5. Remove meat from skillet, tent with foil and let rest 5 minutes. Cut into cubes, against the grain and set aside.

6. Preheat oven to 350-375 degree F.

FINALIING

7. In a large ovenproof dish, spread blue corn tortilla chips at the bottom and up sides.

8. Sprinkle cooked steak cubes over corn chips and spread beer cheese on top.

9. Sprinkle Mexican cheese blend evenly over top and bake for 8-10 minutes or until cheese melts and chips are hot.

10. Remove from oven and sprinkle chopped cilantro evenly over top, followed by green onion, and jalapeno.

11. Squeeze lime juice over top and garnish with fresh lime wedges.

SERVING

12. Serve while hot and enjoy!
