1. In a saucepan, put all ingredients of the barbecue sauce and simmer for 10-15 minutes. Blend and season with salt.
2. In a pan, add 1/2 cup of the prepared sauce and jack fruit, crush and cook for about 5 minutes.
3. Spread rice over tortillas, spoon some of the jack fruit mixture, followed by the other ingredients listed for assembling.
4. Serve with your choice of beverage.
