Scallops En Brochette

Ingredients
  Sea scallops 24
  Olive oil 2 Teaspoon
  White vinegar 2 Tablespoon
  Low sodium soy sauce 1⁄4 Cup (4 tbs)
  Ground ginger 1 Teaspoon
  Garlic 1 Clove (5 gm), finely minced
  Finely minced parsley 1 Tablespoon (Use Fresh)
  Minced fresh parsley 1 Tablespoon
  Nonfat cooking spray 4
Directions

GETTING READY
1 Throughly clean the scallops and put them in a resealable plastic bag.
2 In a bowl, mix together the oil, vinegar, soy sauce, ginger, garlic and parsley together and pour over the scallops.
3 Seal the bag and place in the refrigerator for approx 2-6 hours.
4 Coat the grill with some cooking spray and preheat for 5 minutes.

MAKING
5 On the skewers, thread the scallops and place on the grill horizontally for 4-6 minutes, or until they become opaque.
6 Do not allow to overcook.

SERVING
7 Discard any extra marinade and serve immediately.
