Yellow Squash and Onion Casserole


This is a delicious dish. You need to thinly slice the onions and yellow squash and cover the bottom of the casserole. Throw in some vegetables and dribble some oil on top of it all. Dish with a little vegetable oil. Layer some more squash and onions on top of the veggies and for an extra burst of flavor, spread some mustard on them. To top it all off, sprinkle some bread crumbs, grated cheese, salt and butter over the entire dish. Some dabs of butter would greatly enhance this preparation. Cover and bake at 350 degrees for about 45 minutes, or until the squash and onions are tender.


 


Sweet Corn Vegetable Soup


This is a popular recipe in Chinese cuisine. This flavorful soup can be made with corn along with some cream of corn and other vegetables or you can stick to simply making it with corn. You will need some vegetable stock but if you don’t have that handy you can use water. This recipe calls for corn flour but if you want a healthier option you can try using rice flour or tapioca flour instead of the corn flour.
