Melon Bubble

Ingredients
  Lemon gelatin 3 Ounce (1 Package)
  Boiling water 1 Cup (16 tbs)
  Cold water 3⁄4 Cup (12 tbs)
  Cointreau liqueur/Orange juice 1⁄4 Cup (4 tbs)
  Melon balls 1 Cup (16 tbs) (Alternately Or Omit Liqueur Or Juice; Increase Cold Water To 1 Cup.)
Directions

Dissolve gelatin in boiling water.
Add cold water and liqueur.
Chill 1 1/3 cups until thickened.
Fold in melon balls.
Pour into serving bowl and chill until set, but not firm.
Set bowl with remaining gelatin in a larger bowl of ice and water.
Stir until slightly thickened then whip until fluffy and thick, and about double in volume.
Pour over set gelatin.
Chill until firm about 3 hours.
Garnish with additional melon balls and mint leaves, if desired.
