Cantaloupe Stuffed With Fruits 'N Cheese
|Cantaloupe||1 1⁄2 Pound, halved and seeded (1 Cantaloupe)|
|Part skim ricotta cheese/Low-fat cottage cheese||8 Ounce (1 Cup)|
|Sliced strawberries||1 Cup (16 tbs)|
|Bran cereal/Sunflower seeds||2 Tablespoon|
1. Use a melon baller to scoop out 2 cups of melon balls from the cantaloupe and then reserve the shells for later user.
2. In a small bowl, tip in the ricotta, melon balls and the strawberries. Chill
3. To serve, line the reserved shells with lettuce and fill with ricotta mixture and sprinkle with cereal before serving chilled.
