Stir Fried Bitter Melon

Ingredients
  Bitter gourd 1 Medium, peeled, seeds removed, cut into 1 cm/1/2 in thick slices (Bitter Melon)
  Salt 2 Tablespoon
  Vegetable oil 1 Tablespoon
  Dried prawns 3 Tablespoon, dried (Use Small Prawns)
  Red shallots/Golden shallots 6 , sliced
  Garlic 2 Clove (10 gm), sliced
  Lemon grass stalk/1 teaspoon finely grated lemon rind 2 , finely sliced (Use Fresh Stalks)
  Fresh green chilies 3 , finely sliced
  Pawpaw 1 Small, cut into 3 centimeter, 1 1/4 inch cubes
  Mange-tout 4 Ounce, halved (125 Gram Snow Peas)
  Tamarind concentrate 1 Tablespoon
Directions

1. Rub each slice of bitter melon (gourd) with salt, place in a colander and set aside for 30 minutes. Rinse under cold water and drain thoroughly.
2. Heat oil in a wok over a medium heat, add dried prawns, shallots, garlic and lemon grass or rind and stir-fry for 4 minutes or until shallots are golden.
3. Add chillies and bitter melon (gourd) and stir-fry for 4 minutes or until melon is tender. Add pawpaw, snow peas (mangetout) and tamarind and stir-fry for 2 minutes or until snow peas (mangetout) are tender.
