Sweet Honeydew Tapioca Delight
|Tapioca pearls||2 Tablespoon|
|Water||4 Cup (64 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Pureed honeydew melon||1 Cup (16 tbs)|
|Diced honeydew melon||1⁄4 Cup (4 tbs)|
|Evaporated milk||6 Tablespoon|
Soak tapioca pearls in warm water to cover for 5 minutes.
Drain and set aside.
Cooking Bring the 4 cups water to a boil in a medium saucepan.
Add soaked tapioca and sugar and cook, stirring, for 5 minutes or until tapioca become translucent.
Remove from heat and let cool.
Stir in honeydew puree and refrigerate until chilled.
Stir in diced honeydew.
Transfer to six dessert bowls.
Pour one tablespoon evaporated milk into each bowl.
