Fruit Filled Melon Bowls
|Cream cheese||3 Ounce, softened (1 Package)|
|Strawberry yogurt||2⁄3 Cup (10.67 tbs)|
|Cantaloupe/Honeydew melons||2 Small|
|Fresh strawberries||2 Cup (32 tbs), halved|
In small mixer bowl beat cream cheese with electric mixer till fluffy.
On low speed add half of the yogurt; beat till smooth.
Stir in remaining yogurt by hand.
Cover and chill.
Halve and seed melons; scoop out melon balls.
Scrape any remaining fruit from shell (chill for another use).
Reserve melon shells.
Cut bananas into bias slices.
Combine melon balls, bananas, and strawberries.
Line melon shells with lettuce leaves; spoon fruit mixture into shells.
Spoon yogurt mixture over fruit.
If desired, garnish each with a sprig of mint.
