Melon Polka Dot Mold

  Cherry gelatin 6 Ounce (2 Packages)
  Boiling water 2 Cup (32 tbs)
  Cold water 1 3⁄4 Cup (28 tbs)
  Lemon juice 3 Tablespoon (Fresh / Frozen / Canned)
  Cream cheese 8 Ounce (1 Package)
  Cantaloupe balls/Honey-dew balls / watermelon balls 1 1⁄2 Cup (24 tbs)
  Pecan halves 2⁄3 Cup (10.67 tbs)
  Sliced stuffed green olives 1⁄2 Cup (8 tbs)

Dissolve gelatin in boiling water.
Add cold water and lemon juice.
Pour 1 cup gelatin mixture into 6 1/2 cup ring mold.
Chill till partially set.
Shape cream cheese in small balls (about 30).
Alternate 9 cream-cheese balls with 9 melon balls in bottom of mold.
Place pecan halves in gelatin clear around outer edge of bottom of mold.
Chill firm.
Meanwhile chill remaining gelatin till partially set; add remaining cheese and melon balls, pecan halves, and the olive slices.
Pour over first mixture and chill till firm.
Unmold and garnish with mint.
