This Broiled Lamb Chops With Apricots can be made ahead ready to serve your spouse or his friends on demand.
Ingredients
  Dried apricot halves 8 Small
  Finely chopped onions 1 Tablespoon
  Lamb chops 2 , with pocket cut between bones, completely trimmed of fat (Double Rib Lamb Chops)
  Dried rosemary 1⁄2 Teaspoon
  Dried thyme 1⁄2 Teaspoon
  Grated lemon peel 1⁄2 Teaspoon
  Black pepper To Taste
Directions

Divide apricots and onion in half and insert the apricots and onion into each pocket of chops.
Press the herbs, lemon peel and pepper on both sides of each chop.
Freeze.
