Fennel With Tomatoes
|Smoked streaky bacon||2 Ounce, cut into strips|
|Finely sliced onion||3 1⁄2 Ounce|
|Tomatoes||2 Large, skinned and coarsely chopped|
|Fresh lemon juice||3 Tablespoon|
|Grated parmesan cheese||1⁄2 Cup (8 tbs)|
|Chopped fresh parsley||1 Tablespoon|
Pour the oil into a dish large enough to cook the fennel in.
Add the bacon and onions.
Cover and microwave on HIGH for 3 minutes.
Remove the stalks and tough base of the fennel.
Slice finely, rinse and drain.
Add the fennel and tomatoes to the onions and pour the lemon juice over.
Cover and microwave on HIGH for 10 minutes.
Add the grated parmesan and season with salt and pepper.
Cover and microwave on HIGH for 1 further minute.
Leave to stand for 2 minutes, then sprinkle with chopped
