Make Kibbe mixture. Divide it into 8 parts. Shape each into rounds about 1.25cm thick and make an indentation in each with the thumb. Transfer the rounds to a platter, pour a little oil into each indentation and garnish the dish with strips of green shallots. If liked, accompany with a small bowl of Hot Pepper And Onion Paste. Serves 8.
HOT PEPPER AND ONION PASTE: Grind together in a blender or food processor 1 quartered onion and 1 small hot red chili.
