1. In a nonstick frying pan over high heat, pour olive oil, then lower the heat to medium. Add halloumi cheese and fry until browned. Flip, and continue to fry until the other side is browned.
2. In the leftover oil, add chilly powder, mint leaves, scallions and sir well. Add balsamic vinegar and season well.
3. On a serving platter, place the fried cheese and top with water melon cubes. Pour the seasoned mixture on the cheese.
4. Serve this fried halloumi cheese dish with sliced cucumber as a tasty appetizer for dinner.
