Greek Baklava Muffins
|Walnuts||1 Cup (16 tbs), chopped|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Brown sugar||2 Tablespoon|
|Cinnamon||1 1⁄2 Teaspoon|
|Butter||3 Tablespoon, melted|
|Flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||2 Teaspoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Honey||1⁄2 Cup (8 tbs)|
|Buttermilk||1 Cup (16 tbs)|
Mix filling ingredients together in a small bowl.
Combine flour, baking powder, soda and sugar in a large bowl.
In another bowl, whisk egg, melted butter and buttermilk.
Add to dry ingredients, stirring quickly until mixed.
Fill greased muffin cups one-third full, add one tablespoon filling, then cover with batter until two-thirds full.
Sprinkle any remaining filling on top.
Bake until golden brown.
Remove from muffin tins and drizzle with honey.
Bake at 400 degrees 15-20 minutes
