Carrot Salad With Moroccan Dressing

The carrot salad with moroccan dressing is a cooked salad that can be served with meals as a side. Prepared with a dressing of lemon juice, orange juice, honey paprika and cinnamon, the carrot salad with mocrrocan dressing is sprinkled with mint, cilantro and seasame seed and oil before serving.
  Carrots 2 Pound
  Orange juice 75 Milliliter (1/3 Cup)
  Lemon juice 25 Milliliter (2 Tablespoon)
  Honey 1 Tablespoon
  Paprika 1 Teaspoon
  Ground cumin 1 Teaspoon
  Chopped mint/Parsley 2 Tablespoon
  Chopped cilantro/Parsley 2 Tablespoon
  Sesame oil 1 Teaspoon
  Sesame seeds 1 Teaspoon (Toasted)
  Salt To Taste
  Pepper To Taste

Cut carrots on diagonal into 1/2 inch/1 cm slices.
Bring pot of water to boil.
Add carrots and cook for about 4 minutes.
Drain, rinse with cold water and pat dry.
In large bowl, combine orange juice, lemon juice, honey paprika, cumin and cinnamon.
Add carrots and toss.
Sprinkle with mint, cilantro, sesame oil and sesame seeds.
Taste and season with salt and pepper.
