Rack of lamb
1 (Approximately 8 Chops)
200 Gram, finely chopped
1 Cup (16 tbs)
1⁄2 Cup (8 tbs)
1 , lightly beaten
Mix together apricots, breadcrumbs, ground almonds, rosemary and egg.
Press apricot crust on top of lamb.
Place on a rack.
Cook for 25-30 minutes on MEDIUM.
Allow to stand 10 minutes before carving.
