Vegan Pear Baklava

This is a modern rendition of a classic Baklava. Instead of using filo dough as the base and layers thinly sliced pears are used. There is still the basic simple syrup and if wanted honey.
Ingredients
  Gold pear 8 , thinly sliced
  Simple syrup 2 Cup (32 tbs)
  Pistachio 3 Cup (48 tbs)
  Brown sugar 1 Cup (16 tbs)
  Honey 1 Tablespoon
Directions

Preheat the oven to 350
Take the pears and thinly slice them length wise.
Make the 1-2 cups Simple Syrup by making a mixture of equal parts water and sugar on the stove. Bring up to heat and boil until the sugar is dissolved into the water.
Grind the 3 cups of nuts into an almost paste. Make sure there is still some texture in the nuts.

Take the first layer of pears and lay them down covering the entire bottom of a 9*9 well greased pan. Take enough nuts to cover the entire bottom of the pears. Sprinkle brown sugar evenly over the entire surface of the nuts. Then pour enough simple syrup to cover the brown sugar, and if wanted some honey. Make a new layer of pears and repeat the process again until there are no more pears left. Then cover the top in the rest of simple syrup and bake in the over for 30 minutes, or until the top layer of pears is almost crisp. Remove from oven and let rest for 30 minutes, then cut into desired shapes and sizes.

This is one of the best recipe of baklava. But I think this is basically from Turkey cuisine and also very popular in cyprus.Thanks for sharing this recipe.

Tomorrow is my church group's regular meeting, along with a special celebration. I plan on bringing this dessert. I avoid honey, but can substitute agave, though the simple syrup seems sweet enough. Most likely, I will add 1 TB of fresh lemon juice. I am combining this with a "traditional" recipe and plan on using fewer pears and less nuts. Thanks for sharing!
