One-Dish Speedy Couscous

Fast and flavorful, this low-fat, healthy dish comes together in a flash!

Ingredients

Couscous 12 Ounce
Cooked chicken 2 Cup (32 tbs) , diced
Orange juice 2 Cup (32 tbs)
Fresh basil 1/4 Cup (4 tbs) , chopped
Green onion 2 , finely chopped
Salt 1/2 Teaspoon
Pepper 1/2 Teaspoon
Vegetables:
Zucchini 1 , chopped
Celery stalk 1 , finely sliced
Carrot 1 , peeled and grated

Directions

MAKING

1. In a large bowl, combine couscous, chicken and the vegetables, set aside.

2. In a saucepan, boil orange juice over medium heat. Pour into the chicken - vegetable mixture. Cover with a plastic wrap and let it stand for 5 minutes.

3. Uncover, basil, green onion, salt and pepper, stir to mix.

SERVING

4. Serve with your choice of beverage.

TIPS

Bring orange juice to a boil in a saucepan over medium heat stir into couscous mixture. Cover tightly with plastic wrap let stand for 5 minutes. Stir gently until evenly mixed. Serves 4.
