1. In a sauté pan, heat olive oil and sauté the onions till translucent.
2. Add the sugar and continue sautéing till it thickens and begins to brown.
3. Sprinkle with a pinch of aniseed and pour apple vinegar.
4. Allow it to melt and develop a glaze on the onion.
5. In a serving plate, serve it with vegetables or as it is.
