  Zuchinni 6 (For Sautéed Zucchini with Garlic, Mint & Feta)

Directions

GETTING READY
1. For Chicken Rollatine with Tomato Roasted Red Pepper Sauce – chop carrots, tomatoes, basils.
2. Make puree of roasted red bell peppers.
3. Lay down chicken strip and fill that with chicken thigh and apple sage sausage.
4. Make a roll and hold that with a toothpick.
5. For Cumin Scented Quinoa with Peas – chop yellow pepper, green onions and basils.
6. For Sautéed Zucchini with Garlic, Mint & Feta – Slice zucchini and chop fresh mint.

MAKING
7. For Making Chicken Rollatine with Tomato Roasted Red Pepper Sauce – Heat olive oil in a pan.
8. Add in chicken rolls and sauté for few minutes.
9. Transfer rolls in a plate and in same pan add in onion and carrots, stir fry for few minutes.
10. Pour in white wine add in tomatoes, stir well.
11. Pour in pepper puree, salt, black pepper and garlic. Cover for 5 minutes.
12. Add in chicken roll in the gravy and cover again.
13. Put the heat on low and let it simmer for 20 minutes.
14. Add in basil leaves and mix well.
15. For Making Cumin Scented Quinoa with Peas – heat olive oil in a pan.
16. Add in green onions and yellow pepper and sauté.
17. Sprinkle cumin powder and smoked pepper powder. Sauté for few minutes.
18. Add in quinoa and sauté again, pour in vegetable broth.
19. Cover the pan and let it simmer for 15 minutes.
20. Add in fresh minced garlic in quinoa, stir.
21. Add in the frozen peas, pine nuts and basils, stir again for few minutes.
22. For making Sautéed Zucchini with Garlic, Mint & Feta – heat olive oil in a pan.
23. Toss in zucchini stir fry for few minutes.
24. Add in ground black pepper, garlic and mint.
25. Turn the heat off and add in feta cheese.
26. Cover the pan and keep aside.

SERVING
27. For serving Chicken Rollatine with Tomato Roasted Red Pepper Sauce take out toothpick from the rolls.
28. In a plate take chicken rollatine sauce, place quinoa over it top with chicken rolls and garnish with basils.
29. Serve Zucchini in a separate plate.
