Moroccan Chicken Tagine

Ingredients
  Chicken breasts 24 Ounce (4 nos, 175 g /6 oz, skinless)
  Onions 2 , fine chopped
  Cinnamon sticks 2
  Ginger 1⁄2 Teaspoon, ground
  Coriander 1⁄2 Teaspoon
  Apricots 5 1⁄2 Ounce, chopped (150 g, Ready-to-eat)
  Honey 1 Tablespoon
  Half fat creme fraiche 2 Tablespoon
  Fresh coriander 2 Tablespoon, chopped
  Black pepper To Taste
  Salt To Taste
Directions

MAKING
1. In a large saucepan place the chicken over medium heat. Add cinnamon sticks.
2. Mix onions. Sprinkle coriander and ginger. Add salt as per taste.
3. Add water. Cover and simmer for 60 minutes.
4. Combine honey and apricots.
5. Cook 30 minutes uncovered till the sauce reduces.
6. Add seasonings as per taste.

SERVING
7. Serve Moroccan Chicken Tagine with creme tranche and garnished with chopped coriander.
