Mediterranean Fish Stew

Ingredients
  Olive oil 1⁄4 Cup (4 tbs)
  Onion 1 Large, chopped
  Garlic 5 Clove (25 gm), minced
  Dried parsley 1 Tablespoon
  Basil 1 Teaspoon
  Oregano 1 Teaspoon
  Black pepper 1 Teaspoon
  Turmeric 1⁄2 Teaspoon
  Saffron 1 Pinch
  Diced tomatoes 2 Cup (32 tbs)
  Lemon juice/Vinegar 2 Tablespoon
  Haddock/Cod 1 1⁄2 Pound, cut into chunks
  Scallops 1⁄2 Pound
  Minced clams with liquid 1 Cup (16 tbs)
  Salt To Taste
Directions

MAKING
1. In a large skillet, gently warm olive oil on a very low flame.
2. Add onion and garlic. Saute for 5 minutes or until onion turns soft.
3. Add parsley, basil, oregano, black pepper, turmeric and a pinch of saffron. Stir it well.
4. Add tomatoes and lemon juice or vinegar. Stir it well and let it simmer for 5 minutes.
5. Add fish, scallops, and clams with liquid. Let it simmer for around 20 minutes or until fish becomes tender.
6. Check the taste and add salt if desired.

SERVING
7. Serve Mediterranean Fish Stew with crusty bread or garlic croutons.
