Warm Mediterranean Rice Salad
|Converted rice||1 1⁄2 Cup (24 tbs), uncooked (UNCLE BEN'S Brand)|
|Dried basil||2 Teaspoon|
|Red wine vinaigrette||1⁄2 Cup (8 tbs), divided|
|Canned solid white tuna in water||6 Ounce, drained and flaked (1 can)|
|Chopped green bell pepper||1 Cup (16 tbs)|
|Chopped tomato||1 Cup (16 tbs)|
|Diced red onion||1⁄2 Cup (8 tbs)|
|Kalamata olives/Pitted black olives||1⁄2 Cup (8 tbs) (20 pieces)|
1 As per the package directions, prepare the rice.
2 Stir in the basil and about 1/3 cup of vinaigrette into the cooked rice.
3 In a large slad bowl, combine tuna, bell pepper, tomato and red onion.
4 Add the rice mixture to the tuna and vegetables in the bowl.
5 Add in the remaining vinaigrette and olives.
6 Serve at once.
