Mediterranean Chicken Salad
|Bulgur wheat||5 1⁄4 Ounce (1 Box, Quick Cooking)|
|Chicken tenders||3⁄4 Pound|
|Olive oil||1 Tablespoon|
|Chopped tomato||1 Cup (16 tbs)|
|Chopped fresh parsley||1 Cup (16 tbs)|
|Green onions||2 , sliced|
|Lemon juice||2 Tablespoon|
|Black pepper||To Taste|
1. Prepare bulgur according to package directions; set aside.
2. While bulgur is cooking, cut chicken tenders into 1-inch pieces. Heat olive oil in medium skillet. Add chicken; cook and stir until no longer pink in center. Remove from heat; cool slightly.
3. Combine cooked bulgur, chicken, tomato, parsley, green onions and lemon juice in large bowl; toss gently to blend. Season with salt and pepper to taste.
