Moroccan Lamb Kebabs

Ingredients
  Boneless lamb 1 Pound
  Olive oil 1 Tablespoon
  Lemon juice 2 Tablespoon
  Water 2 Tablespoon
  Balsamic vinegar 2 Tablespoon
  Black pepper 1 Teaspoon, coarsely ground
  Garlic 1 Clove (5 gm), finely minced
  Oregano 1 Teaspoon
  Zucchini 1
  Mushrooms 12
  Cherry tomatoes 8
  Salt 1 Teaspoon
  Black pepper 1⁄2 Teaspoon
  Nonfat cooking spray 1
Directions

GETTING READY
1.Cut away excess fat and make 1 inch cubes of the lamb.
2.Take a small bowl, mix together water, vinegar, lemon juice, garlic, oregano and pepper.
3. Take a flat glass pan and place the lamb cubes in it.
4. Pour marinade over the lamb.Coat all pieces thoroughly.
5. Let marinate for 2 to 12 hours.
6.Scrub clean zucchini and cut into 1 inch cubes.
7.Clean tomatoes and mushrooms.
8. Soak wooden skewers for 20 minutes in water and pat dry.

MAKING
9.Thread lamb alternating with the vegetables on the skewers.
10. Sprinkle with salt and pepper.
11. Coat grill with cooking spray and preheat grill for 5 minutes.
12. Grill kebabs horizontally in the grill for 7 to 8 minutes or as desired.

SERVING
13. Serve warm.
