Mediterranean Vegetable Appetizer

  Canola oil/Olive oil 2 Tablespoon
  Onion 1 , chopped
  Sun dried tomatoes 1⁄2 Cup (8 tbs), cut into thin strips
  Carrot 1 , shredded
  Pepper 1 , seeded and finely chopped (Green Or Yellow)
  Eggplant 1 , minced, peeled
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Sugar 1 Teaspoon
  Red wine vinegar 1 Teaspoon
  Chopped fresh cilantro 2 Tablespoon (Chinese Parsley)
  Pita bread rounds 2

1. Add oil to a large skillet and heat it.
2. Saute in onions for 2 to 3 minutes.
3. Add tomatoes, yellow or green pepper, carrot, egg plant, vinegar, salt, sugar and pepper and stir well.
4. Stirring every now and then, allow the mixture to simmer till vegetables turn tender.
6. Add cilantro and stir well.
7. Cut each of the pita round to get 6 to 8 wedges.

8. Serve vegetable mixture beside pita wedges on individual plates.
