Stuffed Grape Leaves
|Onions||2 , chopped|
|Olive oil||1⁄2 Cup (8 tbs)|
|Cooked rice||2 Cup (32 tbs)|
|Grape leaves||1 Pound|
|Tomato juice||1 Cup (16 tbs)|
|Fresh lemon juice||1⁄4 Cup (4 tbs)|
Fry onions in 2 tablespoons of the olive oil.
Add rice, remaining oil, and salt and pepper to taste.
Place 1 teaspoon of the mixture on each leaf and roll up but as tightly as possible.
Line bottom of casserole with grape leaves and arrange stuffed leaves in layers.
Add tomato and lemon juice and simmer, covered, for 30 minutes.
Serve hot or cold.
