Lamb With Apricots

Ingredients
  Dried apricots 12
  Curry powder 2 Tablespoon
  Oil 2 Tablespoon
  Onions 2 Medium, chopped
  Chopped green ginger 2 Teaspoon
  Garlic 2 Teaspoon, chopped
  Chili powder 2 Teaspoon
  Turmeric 1⁄2 Teaspoon
  Ground coriander 2 Teaspoon
  Tomato concasse 1 Pound
  Lemon juice 1 Tablespoon
  Sugar 1 Teaspoon
Directions

Soak apricots in warm water in bowl until soft; drain.
Saute curry powder in oil in skillet until fragrant.
Add onions; mix well.
Cook until tender, stirring constantly.
Stir in ginger and garlic.
Cook for 2 minutes, stirring constantly.
Add chili powder, turmeric, coriander and tomatoes.
Cook until thickened, stirring constantly.
Add lamb to mixture.
Cook over low heat for 45 minutes or until lamb is tender.
Stir in lemon juice, sugar and apricots.
Cook for 5 minutes, stirring frequently.
Serve with hot cooked long grain rice and poppadums, an Indian bread similar to crackers.
