Moroccan Chicken with Cucumber Melon Relish
|Lemon juice||1⁄2 Cup (8 tbs)|
|Olive oil||1 Cup (16 tbs)|
|Garlic||4 Clove (20 gm), minced|
|Ginger root||3 Tablespoon, grated|
|Ground cumin||2 Tablespoon|
|Ground coriander||4 Teaspoon|
|Ground cinnamon||1 Tablespoon|
|Ground red pepper||2 Teaspoon|
|Ground black pepper||1 1⁄2 Teaspoon|
|Chicken pieces||8 Pound, skinned|
|Cucumber melon relish||1|
1. For marinade, in a small bowl stir together the lemon juice, oil, garlic, gingerroot, cumin, coriander, salt, cinnamon, paprika, red pepper, and black pepper. Place chicken into 2 large plastic bags set in 2 large bowls. Pour half of the marinade over chicken in each bag. Seal bags and turn several times to distribute the marinade. Marinate chicken in the refrigerator for 4 to 24 hours, turning bags occasionally. Drain chicken, discarding marinade.
2. Grill chicken on the rack of an uncovered grill directly over medium coals for 35 to 45 minutes or till chicken is no longer pink, turning once.
