Nut Stuffed Figs
|Dried figs||24 (One 12 Ounce Package, Whole)|
|Orange juice||1 Cup (16 tbs)|
|Grated lemon peel||1 Tablespoon|
|Lemon juice||1 Tablespoon|
|Sugar||1⁄4 Cup (4 tbs)|
Remove stem end from figs.
Combine orange juice, lemon peel and juice, and 3 tablespoons sugar.
Pour over figs in saucepan.
Heat to boiling.
Simmer, covered, till fruit is tender, about 45 minutes.
Drain well; cool.
Insert knife in stem end of each fig to form a pocket.
Fill each with a pecan half.
Roll figs in remaining sugar.
