Mediterranean Shrimp Bowl
|Olive oil||2⁄3 Cup (10.67 tbs)|
|Wine vinegar||1⁄3 Cup (5.33 tbs)|
|Garlic||1 Clove (5 gm), crushed|
|Dried oregano leaves||1 Teaspoon|
|Lemon||1 , juiced|
|Onion||1 Medium, thinly sliced and separated into rings|
|Shrimp||2 Pound, cooked, peeled, and deveined|
1) In a medium mixing bowl, combine together the olive oil, wine vinegar, salt, pepper, garlic, oregano leaves lemon juice and onion. Stir properly. Add the shrimos and toss.
2) Cover the bowl tightly and refrigerate for a minimum of 2 hours, tossing the mixture occasionally.
3) Drain the shrimp and pour it into a serving bowl.
4) Serve at room temperature. If preferred, garnish with cherry tomatoes, endive and/or mushromms.
