Mediterranean Rice

Ingredients
  Onion 1 Medium, finely chopped
  Green bell pepper 1 , finely chopped
  Garlic 3 Clove (15 gm), finely chopped
  Extra virgin olive oil 2 Tablespoon
  Pigeon peas 1 Can (10 oz)
  Pimento stuffed green olives 3 Tablespoon
  Achiote 1 Tablespoon (Or Bijol)
  Canned tomato sauce 8 Ounce (1 Can)
  Saffron 2 Pinch
  Oregano 1⁄2 Teaspoon
  Capers 2 Tablespoon
  Tabasco sauce 1⁄4 Teaspoon
  Salt 1 Teaspoon
  Pepper 1⁄2 Teaspoon
  Uncooked white rice 2 Cup (32 tbs)
  Water 3 Cup (48 tbs) (About)
Directions

Saute onion, green pepper and garlic in olive oil in heavy saucepan until tender.
Add undrained peas, olives, bijol, tomato sauce, saffron, oregano, capers, Tabasco sauce, salt and pepper; mix well.
Bring to a boil.
Cook for 2 minutes, stirring frequently.
Stir in rice and about 3 cups water or enough to cover ingredients by 1/8 inch.
Reduce heat.
Simmer, covered, for 15 minutes.
Stir, mixing ingredients from bottom of pan to top.
Simmer, covered, for 15 minutes longer or until rice is tender.
