Mediterranean Pasta Salad
|Cheese tortellini||8 Ounce (1 Package, Refrigerated / Frozen)|
|Vegetables||9 Ounce (1 Package, Italian Style)|
|Canned pineapple chunks||8 Ounce (1 Can)|
|Balsamic wine vinegar/Red wine vinegar||2 Tablespoon|
|Olive oil/Vegetable oil||1 Tablespoon|
|Link turkey sausages||1⁄4 Pound, cooked, drained and sliced|
|Bell pepper||1 Medium, cut into 1-inch pieces (Red / Yellow / Green)|
Prepare tortellini as package directs, except add Italian style vegetables during last 2 minutes of cooking; reserve seasoning packet. Drain.
Drain pineapple; reserve 1/4 cup juice. Combine reserved juice, vinegar, oil and seasoning packet in large serving bowl.
Add tortellini, vegetables, sausage, bell pepper and pineapple to dressing; toss to evenly coat. Serve at room temperature or chilled. Toss before serving. Garnish with fresh herbs, if desired.
