Mediterranean Chicken With Dried Fruits And Couscous

Ingredients
  Boneless chicken breasts 1 1⁄2 Pound, halved (750 g, 4 breasts)
  Sweet butter 2 Teaspoon
  Onion 1 , finely chopped
  Boiling chicken stock 2 Cup (32 tbs)
  Raisins 1⁄4 Cup (4 tbs)
  Dried apricots 1⁄4 Cup (4 tbs), slivered
  Dried prunes 1⁄4 Cup (4 tbs), chopped
  Grated orange rind 1 Teaspoon
  Coriander seeds 1⁄2 Teaspoon, toasted
  Bay leaf 1
  Salt 1⁄2 Teaspoon
  Freshly ground pepper 1⁄4 Teaspoon
  Couscous 1 Cup (16 tbs)
Directions

1. In a medium size skillet, melt butter. Add chicken; saute for 2 minutes per side, until golden. Remove chicken from skillet. Set aside.
2. Add onion to skillet; saute for 3 minutes, until softened.
3. Add stock, raisins, apricots, prunes, orange rind, coriander seeds, bay leaf, salt and pepper to skillet. Stir in couscous; mix well.
4. Return chicken breasts to skillet. Bring to boil, reduce heat, cover and simmer for 15 minutes, until liquid is absorbed and chicken is tender and no longer pink.
5. Serve immediately.
