|Fresh green beans||3⁄4 Pound, washed and trimmed|
|Tomato||1 Large, cut into wedges|
|Onion||1 Small, sliced|
|Olives||1⁄3 Cup (5.33 tbs), pitted|
|Anchovy fillets||1 Ounce|
|Hard boiled eggs||2 , sliced|
|Canned tuna||10 Ounce, drained and chunked|
1) Place the green beans in boiling water and cook, covered for 15 minutes or until they begin to soften. Drain and place in cold water. Drain again. Pour 1/3 cup of your favorite oil and vinegar dressing and toss well. Refrigerate the beans for 1 hour.
2) Place the marinated beans in a salad bowl. Add the tomatoes, onions, olives and anchovy fillets. Toss lightly. Add the egg and tuna. Toss lightly. Serve with remaining oil and vinegar dressing.
