Lamb Crown Roast With Apricot Stuffing
|Herb-seasoned stuffing mix||2 Ounce (1/2 Of 4 Once Package)|
|Water||1⁄4 Cup (4 tbs)|
|Chopped celery||3 Tablespoon|
|Chopped dried apricots||3 Tablespoon|
|Lamb rib crown roast||1|
1. Melt butter in a 1-quart glass casserole in microwave oven (30 to 45 seconds at HIGH). Add stuffing mix, water, celery and apricots; mix well.
2. Place lamb crown roast on a roast rack set in a 2-quart glass baking dish. Fill center cavity with stuffing. Cover with waxed paper. Cook in microwave oven 10 minutes at ROAST.
3. Rotate dish one-half turn. Insert Temperature Probe into meaty portion of roast. Shield meat and ribs as needed with foil. Cook covered in microwave oven set at 160°F and at ROAST.
4. Remove roast from oven. Cover with foil and allow to stand 10 minutes before serving.
