Mediterranean Skordalia Dip

Watch Chef Mike Leitner, executive chef of Lamb Weston, as he demonstrates a twist on the classic hummus. Instead of garbanzo beans, we'll be using potatoes. Hopefully this will inspire some ideas of your own. Enjoy!
Ingredients
  Almonds 30 Gram
  Garlic cloves 3
  Lemon juice To Taste
  Boiled mashed potatoes 1 Cup (16 tbs)
  Olive oil 1⁄4 Cup (4 tbs)
  Black pepper To Taste
Directions

MAKING
1. In a food processor, pop in almonds, garlic, lemon juice and mashed potatoes.
2. Drizzle in some olive oil and pepper while you are pulsing it down.

SERVING
3. Scoop it into a bowl and you can serve it with any veggies of your choice.
