Hot Mediterranean Chicken Salad

Ingredients
  Chicken breast halves 6
  Onion 1 Medium
  Garlic 1 Clove (5 gm), crushed
  Virgin olive oil 1 Tablespoon
  Dried oregano/1 tablespoon chopped fresh oregano 1 1⁄2 Teaspoon
  Black olives 1⁄4 Cup (4 tbs)
  Cooked green beans 1 Cup (16 tbs)
  Quartered cherry tomatoes 1 Cup (16 tbs)
  Grated lemon peel 2 Teaspoon
  White wine vinegar 2 Tablespoon
  Lemon 1 , juiced
  Shredded lettuce 6 Cup (96 tbs), finely shredded
  Lemon juice 1 Tablespoon
  Chopped parsley 1 Tablespoon, fresh (To Garnish)
  Salt To Taste
  Pepper To Taste
Directions

Poach chicken breasts in defatted chicken stock or season breasts lightly with salt, freshly ground pepper and a pinch of ground cloves.
Saute in olive oil until cooked through.
Cool, discard skin and pull
