Mediterranean Chicken Salad
|Broiler fryer chicken||3 Pound, cut into 4 pieces|
|Dried oregano leaves||1 Teaspoon|
|Red wine||1⁄2 Cup (8 tbs)|
|Peeled cubed eggplant||2 Cup (32 tbs) (1/2-Inch Cubes)|
|Chopped red onion||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm), minced|
Arrange chicken in shallow 3-quart casserole with thickest portions toward outside of casserole.
Sprinkle with oregano, salt and pepper.
Pour wine over chicken.
Microwave at High for 16 to 22 minutes, or until chicken near bone is no longer pink an
