Moroccan Lamb Chops
|Ground cumin||1 Teaspoon|
|Hungarian sweet paprika||1 Teaspoon|
|Ground coriander||1 Teaspoon|
|Ground cloves||1⁄4 Teaspoon|
|Ground red pepper||1⁄4 Teaspoon|
|Lean lamb racks||1 1⁄2 Pound (2 Pieces, French Cut, 8 Ribs Each)|
|Vegetable cooking spray||1|
|Cooked couscous||4 Cup (64 tbs) (Cooked Without Salt Or Fat)|
Preheat oven to 425°.
Combine first 6 ingredients in a small bowl, and stir well.
Rub spice mixture evenly over lamb, and let stand 5 minutes.
Place lamb on a broiler pan coated with cooking spray.
Bake at 425° for 25 minutes or until desired degree of doneness.
Let lamb stand 10 minutes before slicing.
