|Onions||1 Cup (16 tbs), chopped|
|Carrots||2 Cup (32 tbs), sliced 1/2 inch thick|
|Chicken broth||3⁄4 Cup (12 tbs)|
|Lemon juice||1 Tablespoon|
|Grated lemon rind||2 Teaspoon|
|Cooked rice||3 Cup (48 tbs)|
In 3-quart casserole, place chicken pieces with meaty portions along outside of dish.
Add onions and carrots.
Combine broth, lemon juice, lemon rind, paprika, ginger, turmeric and cinnamon.
Pour over chicken.
Microwave at high (10) 25 to 29 minutes until chicken is done and vegetables are tender.
