Mediterranean Beef Kabobs
|Boneless beef top sirloin steak||1 1⁄2 Pound|
|Green onions||3 , sliced|
|Olive oil||1⁄4 Cup (4 tbs)|
|Lemon juice||3 Tablespoon|
|Dried tarragon||2 Teaspoon, crushed|
|Dried oregano||1⁄2 Teaspoon, crushed|
|Freshly ground black pepper||1⁄4 Teaspoon|
|Bottled minced garlic||1 1⁄2 Teaspoon|
Trim fat from meat.
Cut meat into 1 1/2-inch pieces.
Place meat in a plastic bag set in a shallow dish.
For marinade, in a small bowl combine green onions, oil, lemon juice, tarragon, oregano, pepper, and garlic.
Pour over meat; seal bag.
Marinate in the refrigerator for 4 to 24 hours, turning bag occasionally.
Drain meat, discarding marinade.
Thread meat onto six 12-inch skewers, leaving 1/4 inch between pieces.
Place skewers on the unheated rack of a broiler pan.
Broil 4 to 5 inches from the heat for 10 to 12 minutes or until meat is slightly pink in center, turning occasionally to brown evenly.
