Italian Chicken Saltimbocca

Chicken saltimbocca or saltimbocca is a famous Italian dish. The dish is lined or topped with proscuitto or ham. It's marination depends on the regional choice in wine, saltwater or even oil.
Ingredients
  Chicken breasts 4 , sliced half lengthwise
  Salt To Taste
  Pepper To Taste
  Butter 1 Tablespoon
  Prosciutto ham slices 4
  Mozzarella slice 8
  Shallot 1 , diced
  Garlic 3 Clove (15 gm), minced
  Sliced mushrooms 1 Cup (16 tbs)
  Fresh thyme 1 Teaspoon
  Fresh oregano 1 Teaspoon
  White wine 1 Cup (16 tbs)
  Sherry 1⁄2 Cup (8 tbs)
  Heavy cream 1⁄4 Cup (4 tbs)
  Flour 1 Tablespoon
Directions

1. Wrap the chicken in plastic and flatten it.
2. Heat a pan. Add butter and olive oil.
3. Dredge the chicken pieces in flour, salt and pepper mixture.
4. Brown the pieces from both sides.
5. Place the chicken in a baking dish and put proscuitto ham over it.
6. Put mozzarella.
Sauce
7. In the same pan, add butter and olive oil.
8. Saute shallots and mushrooms.
9. Add salt. Saute until soft and add dry wine.
10. Add oregano, thyme. Mix well.
11. Cook for about 10 minutes.
12. Mix chicken broth and flour and add it to pan.
13. Add sherry. Stir and then add heavy cream.
14. Cook until sauce thickens.
15. Pour the sauce over chicken and bake it for 10 minutes at 375 F.
