Poached Egg In Tomato Gravy

The solar cooked Algerian Chakchouka with Eggs takes 3 hours and 25 minutes to be ready. The dish goes well with steamed rice and suits to any simple meal making it a complete meal.
Ingredients
  Red chili/Teaspoon chili powder 1 Small, deseeded and finely chopped
  Free range eggs 4
  Extra virgin olive oil 3 Tablespoon
  Red onion 1 , diced
  Red pepper 1 Large, julienned (Capsicum)
  Green pepper 1 Large, julienned (Capsicum)
  Garlic 2 Clove (10 gm), finely chopped
  Red chili/0.5 teaspoon chili powder 1 Small, dressed and finely chopped
  Cumin 1 Teaspoon
  Paprika 1 Teaspoon
  Salt 1 Teaspoon
  Canned tomatoes 14 Ounce, chopped (420 G)
  Eggs 4
Directions

HEAT the oil in a large frying pan over a medium heat and cook the onion for 2 minutes. ADD the red and green peppers, garlic and chili and cook for 10 minutes, stirring regularly. ADD the tomatoes, cumin, paprika and salt, mix well and simmer gently, uncovered, for 10 minutes until thickened. MAKE four indentations in the mixture with the back of a spoon, and crack one egg into each. COVER and simmer for five minutes until the eggs are set. SERVE with crusty bread or lightly buttered whole grain toast on the side.
