Classic Mediterranean Cod Pouches
|Cod fillets||12 Ounce|
|Chopped kalamata olives||2 Tablespoon|
|Chopped green olives||2 Tablespoon|
|Green beans||4 Ounce, trimmed|
|Garlic||1 Clove (5 gm), chopped|
|Cherry tomatoes||3⁄4 Cup (12 tbs), halved|
|Lemon zest||1 Teaspoon|
|Lemon||1⁄2 , sliced|
|Chopped parsley||1⁄4 Cup (4 tbs)|
|Extra virgin olive oil||1 Tablespoon|
|Anchovies||4 , minced|
Preheat oven to 400.
1. Combine olives, garlic, tomatoes, lemon zest, anchovies (if used) and parsley in a small bowl. Drizzle with a teaspoon of extra virgin olive and season with salt and pepper.
2. Lay out 2 pieces of foil. Place a single layer of green beans on the bottom. Top with ½ of the tomato mixture followed by the cod fillet.
3. Drizzle cod with a tsp of olive oil and season with salt and pepper. Top each fillet with 2 slices of lemon.
4. Pull sides of foil up and fold over to seal. Pull sides in and seal as well. Pop in the oven for 25-30 minutes or until cod is cooked thru.
